Just like you, I have been lazy-in‘ around too🤫😴🤤😛🤪😜
Some of you must be back to the ‘New Normal’🥳
And Some of you must still be in lockdown 🌈
So here’s a quick bowl of sunshine for your day 🦋🌽💕😍

I have been craving some good STREET STYLE Mexican Corn 🌽
🌽🦋🥰😍💕🌈

So let’s get started 👩🍳💃🏻🥰😍💕🦋🌈✨
INGREDIENTS For Mexican Corn🥰🌈
Sweet corn(Boiled) 1 (cut into 2 half’s)
Mayonnaise 2 tbsp
Cheese 1 cube
Fresh cream 2 tbsp
Salt to taste
Italian seasoning to taste
Tabasco sauce (optional) 1/4 tsp
INGREDIENTS For Mexican Rice 🌽🌈
Oil 1 tbsp
Rice 1 1/2 cup
Veggies(carrots,capsicum,tomato) 1/2 cup
Salt to taste
Cumin powder 1/4 tsp
Black pepper 1/4 tsp (to taste)
Chilly powder 1/4 tsp
Garlic 2 cloves garlic, minced
Onion 1, diced
Corn 1/2 cup
Tomato ketchup 1/4 cup
Schezwan sauce 1 tbsp
Directions for Mexican Street style corn🌽🌈
Take fresh cream in bowl.
Add mayonnaise to the cream and whisk it(2-3mins).
Add salt, Italian herbs, and Tabasco sauce.
Stir it well.
Take the corn, heat it in the microwave for 30secs.
Generously apply the mayo dip all over the corn and season it will grated cheese and Italian herbs(oregano & chilly flakes).
You can feel free to add any topping as you like it💕

Directions for Mexican Rice🥰🌈
Heat oil in a pan over medium heat.
Add garlic and onion, and cook, stir frequently, until onions have become brown, about 2-3 minutes.
Add in rice and stir until toasted, about 2 minutes.
Add in tomato sauce and schezwan sauce and 1tbsp water, and bring to a simmer, about 2 minutes.
Add veggies i.e. corn, capsicum, carrots and tomatoe.
Add chili powder and cumin; season with salt and pepper, to taste.
Bring to a boil; cover, reduce heat and simmer until rice is cooked through, about 13-16 minutes.
Voila!Your Mexican Rice is Ready🦋💕🌽🌈🤗
Arrange rice and corn cob in a bowl w some potato wedges ❤️✨
